  2. For the tempering, heat ghee or oil in a pot and add ½ teaspoons of mustard seeds, ¾ teaspoons of cumin seeds, and 1 pinch of methi seeds.

  4. When the spices begin to splutter, add 1 sprig of curry leaves and fry for a minute or two. Then, add 4 cloves of garlic and the tomatoes.
  5. Follow it up with ¾ teaspoon of salt and ⅛ teaspoon of turmeric. Saute for 2 to 3 minutes.
  6. Cover the mixture and keep cooking until the tomatoes melt and break down.
  7. Once the tomatoes turn mushy, add the Rasam powder and pour 2 ½ to 3 cups of water. If you are using a readymade Rasam powder, add 2 to 3 teaspoons of it.
  8. Adjust the quantity of the powder and water in your Rasam recipe to suit your taste. Use less water if you want a thicker consistency.
  9. Let the mixture boil on medium heat. At this point, add the tamarind. You can also skip it if your tomatoes are too sour. To reduce the sourness or pungency of the other ingredients, add 1 tablespoon of grated jaggery.
  10. Once boiled, garnish the dish with ¼ cup of chopped coriander. Let it simmer till the Rasam thickens.
